Title: First smoke on the Good One Open Range.
Post by: 70monte on July 01, 2016, 07:44:40 PM
I finally smoked some meat on my Open Range and of course the first cook had to be baby back ribs.  I prepared them from a Chris Marks video I watched on Youtube.

I took off the membrane like I usually do and then I lightly spread a layer of mustard front and back and then added some Three Little Pigs Memphis Style rub.  I also used a fork to poke holes between the bones on the back side of the ribs before I put on the Mustard and rub.

I used two large Weber chimney's of unlit with a half chimney of lit and two small pieces of Hickory chunks.  I brought the smoker up to about 250 and put on the ribs.  I set the spinners to 1 1/2 turns and the damper at about 11:00.  The temps stayed from about 255-280 during the entire cook which was okay with me since I tend to cook ribs at a little higher temperature.

I cooked the ribs until a toothpick pushed in between the bones went in like butter and pulled them off after about 5 hrs and 45 minutes of cooking.

The ribs were tender and had a very good taste.  Here are some before and after pics.

Overall I'm very happy how the smoker performed and how the ribs turned out.

Thanks guys.  The meat pulled cleanly off the bone.  These just might be the best ribs I've made.  I thought the PBC ribs were my best but these might just top them.  That Memphis style rub really gave these ribs a very good flavor.

I know! Problem is, I don't have the room for another cooker. Would have to give something up...and I really like my current setup.

Now those will get ones appetite kicked in. Wow
Man they do look great.

Can the Good One Open Range be run on wood alone?

No it cannot. Just not enough real estate. It was designed to run on lump charcoal and a couple chunks of wood. Chris has softened his stance on briquettes lately. I ran mine with great success with KBB and wood chunks.

I did try a all wood fire and the temps were just way too high.

The left overs tasted just as good the next day as they did the day of the cook.  I wished I would have cooked at least one more rack.

How many racks of BB's could you squeeze into the Open Range if you were cooking for a group? I assume you can easily fit a rib rack on the top grate?

I think Smokeasaurus said that you could cook six racks if you use a rib rack on top and put two laying flat on the bottom rack.  Otherwise it's four racks, two on top and two on bottom.

Yup. However the ribs will cook slower on the bottom rack so you will have to rotate the ribs.......

I found the website of a store about 40 miles from me that carries Good One products.  Since we were talking about ribs and rib racks, this store carries a couple of rib racks that are supposedly Good One brand ones.  They are pricy and the website doesn't say which models they fit but here is the link to check them out.  The also carry a half rack to use inside the smoker box of the Open Range.  Here is the website.
