Title: First Briskets on the Longhorn

I was asked to make a couple of Briskets for my buddy's 40th B'Day party.  I started with a couple of Prime Briskets from Costco, got a good deal on them at $2.99 a pound for full packers.

Was working in Billings MT this week, so I didn't get to do anything fancy with just a bit of garlic powder, kosher salt, and some Montreal seasoning.

Used Kingsford Hickory Smoking Logs for the smoke.  I tried to supplement them with both regular charcoal and cowboy lumps but I kept chasing my  temps ( 225 goal ) so I finished up with just straight wood.  I pulled them at 160 IT and FTC'd them for abut 3 hours.

People were eating it as fast as I could cut them so I didn't get any money shot photos, but it was really good.  The flats were not as tender as I hoped, but not bad for the first time smoking on wood.

They look great what a deal on the price. I can't get brisket for under $6# around here.

Great color on them packers. When I was running off-sets I would have a deep pan of water sitting at the opening where the firebox is. Or I would have a water pan setting under the briskets. Also good to have the point facing the firebox side.

Flats can be stubborn sometimes, sounds like all was good with this cook  :thumbup:

We have that same deal at my Costco. 160 degree it? Is that right?

It seems like I always pay about $6 at Winco, but I can buy just points there, finding full packers is tough around here.  The guy at Costco said that they normally have them around that price.  Now I just need to find extra long foil so I can properly wrap them.

I put a foil water pan just inside the opening, it covers about 60% of the hole.  I had to fill it a few times through the cook but it worked pretty well.

Yea, it was 160 it in the flats and about 185 in the points.   Not sure where I'm SUPPOSED to pull it, but in looking at posts here it seemed like a goods starting point.

After 170-175 internal, I don't check for temp after that. Using a toothpick, when it pulls in and out like butter, it is time to pull it and give it a long rest. I rest mine wrapped for at least 2 hours............but that's just me  ;)

Man, those do look great.
I sure wish I could find beef brisket at that price.  :(
