Prime Rib Fajitas.......I know, BLASPHEMY!! :-[ :-[ :-[

Today BamaPat wanted beef fajitas. Well......we had plenty of leftover prime rib so she seasoned some with fajita seasoning and sauteed onions and peppers along with it. Never had fajitas made with prime rib but dang....these were the best!!

An award for creative and practical use of leftovers :)
When my wife and I go to restaurants she inevitably brings home a white plastic box with her "leftovers", presumably for the dog. No. They are for ME. She never eats them or gives them to the dog, so I construct things around them. Fajitas are fair game. so are omelets. Waste not, want not 8)

Somehow using prime rib to make fajitas just didn't seem right, kind of like using Bluefin Tuna and Caviar to make fish tacos.
But it sure did taste right!! That buttery beef flavor with the seasonings was incredible. May have to do an encore of this.

Did I mention something about doing an encore? Had to.....dinner tonight was Prime Rib Fajitas
Now I need to search for some Blue Fin Tuna, can't wait until May 5th, too far off. July 4th maybe..... ;)
