So I came across a recipe for whole fried chicken on the Almazan Kitchen site. They used a marinade of Jalapeno, Ginger, Salt, Curry, Paprika and Lime Juice. Figured that would taste pretty dam good on some wings and I WAS NOT WRONG! I tweaked the recipe slightly and let it sit on some wings for about 5 hours. These had an awesome flavor and a nice creeping heat!

Those look outstanding. Did you finish under higher heat in the oven, or did you do the entire cook on PBC? My son and I have been doing wings quite a bit now (honey lemon pepper is currently my favorite, but I'm definitely trying yours!) but we find we have to finish them in the oven for 5-10 minutes.

Nope, done entirely on the PBC. I put my wings on with the rebars out and lid on for 15 minutes. After 15, I flip and put the lid back on. At 30 minutes the lid comes off for the rest of the cook and I babysit and flip accordingly. The heat will really crank up to the point it goes right through my heat glove. Its where I get my char from. They generally take no more than 45 mins or so with that process.
