My wife loves chicken and rice so with cinco de mayo coming up I thought I would surprise her tonight. Here we go.
Bone a rotisserie chicken.

Roast a poblano pepper.

Steamed,seeded ,pelled and chopped

Diced some red and yellow bells

Peppers are done.

Dice some carrots

Into some chicken broth spiced with Sazon and bay leaf till tender.

Shread the chicken

Make the cream for the casserole. Cream of celery, milk and green chili salsa

Get some cheese ready. Sharp cheddar and queso fresco.

Sazon, onion, garlic and olive oil. Saute til tender

Add the rice. Cook 3 minutes. Add the stock. Cook 15 minutes add the carrots and some peas. Cook 7 more minutes. Rice done. Add the chicken.

Add the soup, milk and chili sauce

Now the cheese

And finally the cilantro

Into a buttered dish

Cook for 30 min at 350
