I loved that video.  I also like the rib one.  those ribs were outstanding.  great color and texture to them.  if it was your 1st time cooking ribs on a offset you nailed it buddy.   :)

RAD, after I get a steady bed of coals, I start adding 16 inch splits to maintain. I may use 10 to 12 of 'em, depending on their size-some are halves & some are quarters.
It really holds the heat well.

Being someone that has never cooked using only wood, do you find it easier and cheaper then using charcoal?

If you have a cheap local source of wood at your disposal, it could be an affordable way to go. If you got to ship the wood in...forgetaboutit....... >:(

Some times it just fun to sit & add wood every hour or two.
I do it both ways both create great food,
I have an inexhaustible supply of free wood however, after trying various sizes I split 6-8 in logs into mini splits.

I don't want "unattended"...

I'm a poker...

The MES is great for unattended when I'm "just cooking" stuff, but when I want to be outside, I want to poke a fire.
Something in my genes, I guess...personal preference, though.

Sometimes you need flexibility
Occasionally I need to run an errand or at LA ill even go sit on a deer stand ::)

Well LA, with the charcoal baskets you use, you do get some free time away from the pit if you choose.......agreed?

Charcoal baskets allow longer , controlled burns, sometimes you need to sleep ::)
