Wife had friends down from out of state and they wanted some ribs. I was happy to oblige, but was concerned at how I was going to fit the 5 racks I needed into my cheap electric smoker.
I used the Grill Mates Molasses and Bacon rub (which now is my favorite!) and put in the fridge overnight. I found a rib rack holder and was able to put 3 1/2 rib slaps on the lower rack and put the other 1 1/2 on the top rack. I smoked for 3 hours on my El Cheapo Brinkman, then foiled with some butter, brown sugar and honey sprinkled on top.Put in the oven for 2 hours at 250 degrees, then put on the grill for about 10 minutes to singe it. I put the BBQ sauce on half and kept half dry.
They were darn good. I still like the unsauced ones the best.

CDN Smoker -- yes I put 3 racks in one foil and 2 in another.
LA --- I have thought about upgrading my smoker. That ECB was the first smoker (and only one) I have had. I bought it 7 years ago when I first tried to learn how to do respectable ribs after years of flame kissed disasters. I have watched with interest some of the pellet smokers you guys use, but that little R2D2 I use is very dependable. The electric element stays the same temp no matter what and the smoke is reproducible. That is hard to give up, but one of these days-----!
