Title: Fast Track Brisket

15 lb whole brisket, with moderate fat trimmed, & coated with TMB's rub.
Smoked over charcoal & pecan chunks.
Temp ran from 275F - 300F, at six hours in the temp was about 165F , then put in large foil pan & tightly covered. Put on gas grill upper rack @ 275 till temp was about 188F , the temperature probe went in like a knife through butter.
Cook time 8.5 hours.
Really tender & tasty.

Looks great LA for a 8 hour brisket!

So will you cook them faster now after you have tasted the results or stick to a lower, longer cook time?

I'll do both.
It's nice to know if I get a craving for a brisket or butt, on a Sat or Sunday @ 7AM , I can Buy one , trim, rub , get it on the cooker & have it ready for supper!

Skin on mashed potatoes ( made from small red potatoes.

Now that I have dried off my key-board....... I haven't had any extra time off since New Years and I am getting a bit tuckerd out right about now....I got a butt and a briskie in the fridge for the next two weekends and I am going high heat on these and I am glad you posted this cook LA!!!

I have had some early a.m. cooks a couple of months ago and they took there toll on me later in the work week...I know I got the electric smoker but the taste aint just the same as when I use charcoal...my gal uses it during the week for supper since our indoor oven is on the fritz.....

So...is that Char-Griller Kamodo working out for you??   Your grub sure looks like it is..........

Smoke the Chargriller Kamodo has allowed me to try Kamodo cooking in my price range.
It's a very good all around cooker & I see why so many people rave about them.
All Kamodo's are simply charcoal fired vertical cookers & I see no reason why the  food product is different in any brand.
That being said, is it a better smoker than my WSM ! No.
Is it better at grilling than my New Braunfels, not as good.
I do like the size , the 20 in grate allows briskets, & BB ribs , st. Louis ribs to fit better than the 18 WSM.
When smoking the heat recovery is very rapid, it easy to check, sauce, or just OOH & AHHH without slowing the cook.
I'm giving my 7 y/o WSM to my future son-in-law ( hey it's in perfect shape) because the CGK is easier to use.
