I smoked a brisket for the 4th time in the Bradley and finally got it right. I had an 11 pound packer that I painted in Molasses and then coated in Cabela's Mountain Man Bourbon Rub. I put it the smoker and set the Auber to run at 225 until IT reached 190 then drop to 130 and hold. I started at 2pm and at bed time at 150 IT I wrapped completely in foil. The next morning when I got up the PID had dropped to 130 and was holding. I took it out and cut off the point, cubed for burnt ends, sprinkled with more of the same rub and back in the Bradley for 2 hours. I sliced the flat and it was excellent. Having just completed the KCBS judge's course I gave the sliced a 9-8-8 and the burnt ends 9-8-7...gave myself room for improvement

Mighty fine looking brisket. I had the best burnt ends last summer at the gathering..Turtle helped cook it and it was the best I ever had. He sent us a huge Wagu beef brisket for us to enjoy..then showed up to help eat it..Most excellent. What I liked about it was there wasn't too much sauce..I can not do bbq sauce, the boys got busy talking and forgot about it. I thought it was perfect. That was the best beef I have eaten in ages and I can still taste it. Pam .☆´¯`•.¸¸. ི♥ྀ.

Great job! It looks like you've found your winning brisket recipe. 8)
I bet the molasses helped. I use brown sugar in my rub, and like the molasses, I think the sugar creates a crust that helps to seal in the juices. And smoke adheres to it nicely too!

Glad to see you kept on trying. This cut is wonderful but not easy to learn. My first few briskets wouldn't have qualified as acceptable dog food :(
