Beer Brats

Today I put some brats on the smoker: Salsiccia, Thuringer Bratwurst and Merguez. I seared them in a cast iron skillet, added some onions and filled up with beer. After simmering over indirect heat for some time I seared the brats over direct heat and served it with the onions and the beer sauce on shortly seared tortillas.

Man, add some spicy mustard and some ice cold beer and that is heaven.

I sure wish we lived closer to one another.  I'd bring the beer (or what-ever) and show up on your doorstep for dinner.  Another quality cook, my friend.
