Leg quarters in the main chamber at 350 while the St. Louis spares cooked in the warmer box at 250.  Finished the spares in the main after the chicken was done and the temp dropped a bit.  Put the chops in with the spares at the end because I still had a pretty live fire that I didn't want to waste.  A little bit of Pittsburgh haluski on the side.

Load up my plate with those good looking vittles, but hold the pasta please.  You know they say "real men don't eat quiche".  In this family, that goes for pasta also.

I mix pecan, post oak and mesquite in that order by amount.
