Easy Crockpot Chicken Dinner

I am still not back to a lot of cooking but this was an easy meal to fix. I have been trying to use some stuff from my freezer and between my wife and Sandman’s carry out we have been eating pretty well!

I had some skinless, boneless chicken breasts thawed out. I followed a recipe I saw pretty close but changed some. It layered in some veggies, the breasts over top and pour chicken broth over just to cover the veggies. I figured the breasts may not dry out being steamed more or less.

I added a little olive oil spray to the pot, 4 carrots cut up, a half of a med. onion diced, 4 stocks of celery cut up, 7 or 8 small potatoes cut in half and a little salt and pepper. I placed the breasts on top and a pint of broth over. I didn’t have chicken broth so I used water, 2 rounded teaspoons of chicken bouillon granules, a good pinch of basil and thyme and mixed well. I did it on low for six hours.

It would have been good to make some gravy with the broth but I was too lazy. I like to mash up the carrots and mashed potatoes, dot it with some butter and spoon a little broth over.

It tasted pretty good along with some crusty bread and butter.  The chicken was too dry. The next time I would use some bacon on top of the chicken or use skin on and bone in breasts.

Very nice Don..you need a sous vide for sure. The bacon sounds good tho, maybe bury the chicken next time, but I am going to try this one too. I love recipes like this one, keep on cooking.  Pam   GO BUCKS  .☆´¯`•.¸¸. ི♥ྀ.

Looks good from here. The bacon sounds like an excellent idea.

I would say yes Jaxon. I knew the 5 hours on low was too long for the breasts since they were at 180 deg. I wanted to use the skinless for less fat in the dish. The best way would probably be to cook with a probe and eat when they are done. Don
