backyard escapades

Pulled out Big worm for some exercise. Skinless chicken legs and my first ever smoked pork steaks. And it was de li cious!
First, gotta quench the thirst.



I'm using lil smokey charcoal chamber. Should give me 4 hours, enough for the cook.



Here we go. Notice that I left out the water bowl. I want to hit the MEATS with as much smoke as possible since this will be a quick cook.



Big worm is holding steady at 234. 2 hours in, chicken is ready.



Time to eat...

Oh yeah, I didn't take the final IT. It looked ready so I took it off the smoker and onto my plate and and and went to town on it.

That is one pretty looking plate of food.  I love the color on that steak.

Is that Basmati rice?

I've never tried the pork steaks.  I've seen them locally, but just haven't tried 'em yet.  If you had been checking the IT, what would you have been looking for?

I think 160 for steak chew texture. Remember that it's really a slice of pork shoulder.
