Peppered Cow Brisket

The whole last year I didn't cook any brisket. So I didn't want to wait any longer and got me one small brisket of about 6 lbs. This was injected with Butcher BBQ Brisket Injection and seasoned with Simply Marvelous Peppered Cow. I smoked it with apple wood on the ceramic cooker at 220°F. At an IT of 160°F I wrapped it into aluminum foil and put it back on the egg until an IT of 198°F was reached.
