Turkey on the Vision

This year did our Thanksgiving turkey on the kamado. Did a America's Test Kitchen take on Julia Child's deconstructed turkey. Main idea is removing the leg quarter and deboning the thighs to speed it cooking. Also is a spatchcock method. Also has benefit to cooking a large amount of stuffing underneath the bird. I added a compound butter under the breast skin to up the flavor

I tried the deconstructed a couple of years ago. Great way to nail your finished IT temp for the different parts. Great job!
