Learning the future son-in-law how to do ribs

Old school ribs that is. Wendy's youngest daughter Autumn is going to marry a wonderful young man. His name is Kyler. He is a youth pastor at a Christian Church and just a all around great guy.

However, he can't be getting hitched until he can man the pit. The Smoke will make sure he will be all set  ;)

We removed the silver on a couple of St. Louis spares. Seasoned one with Burnt Offerings Memphis rub and the other with Kinders brown sugar rub.


No Kingsford or lump today. We used some fat wood to get some kindling started we picked up in the yard. When we had a good coal base we started adding oak wood.


The Char-Griller Outlaw really surprised me. Other than one heat spike to 300 at the beginning, it was pretty easy to run. When the temps started hitting 275, I just opened the fire-box door and she would settle in around 230 until I added another split. Other than having to re-paint the fire-box today, so far so good.

Got the ribs on. Used a water pan by the fire-box opening and it boiled nicely throughout the cook. Only mods to this pit is adding a thermometer at grate level and the dryer vent to drop the smokestack exit lower

Kyler had to leave today. He will be flying to South Carolina to spend time with family for 9 days. I am sure going to miss him, but we have many more good times ahead of us.......................

And...remember...I can see South Carolina from my house..so if I need to keep an eye out for him let me know ;)....

He is a lucky guy! But, The Smoke needs to teach him how to grow a proper beard...

Thanks Pam. The little cabin we were in front of is two doors down from ours. The lady that owns it is hardly ever there, so we use her space for overflow parking and photo ops  ;)

Ahh,,this reminds me of the time that the guys cut a pair of pants like that at the campground..only smaller..so Donna my bff & I went out one night and stapled lace around all the edges and even made a fly on it..thought they were gonna kill us, but we lived..lol.   .☆´¯`•.¸¸. ི♥ྀ.
