Scallops always intimidate me to cook, maybe I watched too many episodes of Hell's Kitchen. Plate looks fantastic!!

Haha. Yeah he is always screaming about the overcooked scallops.

My thought process is that when you feel like the scallops are done then they are overcooked already. I take them off before I think they are done :P

I like the little bay scallops the best and cooked only a few seconds.  I like sea scallops but my wife says they are too tough, I prefer to say chewy. Ribeyes  are a bone of contention, she likes hers WELL done, I like mine mid rare at most. I have been working for years and got her down to mid well and slipping in a medium now and then that she likes.

If your seas scallops are chewy then they were overcooked. High heat and fast. Literally like 45 seconds a side at the most.
