Cook -Air sirloin and poutine

This was my real test and why I bought this unit. I think I have a bad unit. The fan kept turning off for no reason. I finally got it too stay on at defcon 5. Heat never got over 580 degrees. This one is going back to Cabela's for a new one.

So I SV some sirloin for 90 minutes at 127 degrees. Took them out, dryed them off, then reseasoned. On the grill.
Did not get the crust I wanted based on the grill having issues.

The steak was fantastic. Could cut it with a fork. Better char and this would have been a home run.

Sorry your having problems.

My unit has been rock solid over many cooks.

I wil bet they get you a new one - it's Cabela's..they are great on customer service.

Mine gets hotter than the hinges of hell in just a few minutes. I wouldn't be to concerned. Like Tee said, Cabela's customer service is legendary, they will make it right I have no doubt.

It looks great.  You make me want to try poutine - I have never tried it but it looks fantastic.
