Just got these going, using a combo of apple & beechwood for smoke.
Gonna be some of what that rub is.  ;)

Sometimes you have to go in a circle to reach your destination.

Here they are after around 4 hours, maybe another hour to go.  Been chugging along at around 275*
Sure smell good.  Not wrapping or saucing this time, just smoke & time, will rip & dip in sauce.

I think I"m finally getting the hang of these things!  These turned out really close to the way I like my ribs.  The ingredients in the rub are brown sugar, sugar, paprika, seasoning salt, pepper in that order.  I like my rubs with salt low on the list, makes it easier to control the salt/flavor ratio.  I think next time I'll use High On Smokes technique here, http://www.letstalkbbq.com/index.php?topic=18233.msg240667;topicseen#msg240667 and add some salt or a little rub that has a higher salt content up front.

added some of the rub to the Commisary sauce for dipping



This is what I like, not fall of the bone but the bone pulls freely from the meat. 



Nice crust, a little sweet & crunch



Rip & Dip, served with cheesy smashed cauliflower and raw broccoli
