After seeing Mikes tacos a while back i wanted to make some myself.
I got a 2 pack of TL's brined them for about 45 minutes. Rinsed them a coated with a rub which i threw together.
I lit a chimney of charcoal that filled the SnS 3/4 full and added a few chunks of apple wood.
First i put the vegies on the direct side for 7 or 8 minutes to give them a good char. Pulled them and let them cool a bit before blending them up with the immersion blender.
Next up the tenderloins. Cooked indirectly until they reached 130 then seared till they got to 140. Let them rest a bit before slicing and dicing them up to make some very tasty tacos.
