Y'all, I was very trepidicious going into this cook because I have never cooked beef ribs before...didn't know what I was doing. All your advice paid off BIG TIME this afternoon when I took those ribs out of the smoker. I could hardly stand it when I had to let 'em rest for a while, but it was worth it.
I prepped these ribs by applying EVOO as a binder and then coating generously with Steak Savor. What a great seasoning!!! I wrapped 'em in plastic and put 'em in the fridge for a couple of hours.
Around noon I went out to start the fire...it was a beautiful day 'cept for the 80% humidity. I used those hickory mini logs that I got at Academic Sports - that huge bag of wood. I found that it was MUCH easier to control the fire and smoke with that wood than the semi-seasoned pecan I have stacked out back - it'll be good in another couple of months. We maintained 225 */- 10 degrees throughout the whole 4 hours with just thin, blue smoke.
When the ribs reached an appropriate point (they looked good), I wrapped 'em in foil and put 'em back in for another hour or so. When I opened the foil, they were beautiful AND they tasted sooooooo good. We will be cooking these again.
