However, the outside temperature is 42 degrees and the winds are 29 miles per hour with intermittent showers. It feels like it is 33 degrees right now. Tomorrow, it is suppose to be a high of 45 degrees but the winds will diminish to 19 mph.
For the last 2 days, I had the ribs in a brine. This morning, I put the rub on the ribs but decided to postpone this cook. So right now, the ribs are sitting in the fridge with the rub for the next 24 hours. Tomorrow's prospects are not much different than today except for the winds. As a matter of fact, it is not projected to warm up here until next Wednesday.
Tomorrow, the ribs go on weather or not. I have a welders blanket that I am going to throw over the top of the pit to see if I can keep the heat where it belongs. So be it. If push comes to shove, they will go in the home oven. This will be my first real cold weather cook.
