I was going to make ribs today!

However, the outside temperature is 42 degrees and the winds are 29 miles per hour with intermittent showers. It feels like it is 33 degrees right now. Tomorrow, it is suppose to be a high of 45 degrees but the winds will diminish to 19 mph.

For the last 2 days, I had the ribs in a brine. This morning, I put the rub on the ribs but decided to postpone this cook. So right now, the ribs are sitting in the fridge with the rub for the next 24 hours. Tomorrow's prospects are not much different than today except for the winds. As a matter of fact, it is not projected to warm up here until next Wednesday.

Tomorrow, the ribs go on weather or not. I have a welders blanket that I am going to throw over the top of the pit to see if I can keep the heat where it belongs. So be it. If push comes to shove, they will go in the home oven. This will be my first real cold weather cook.

Ed you could use your YS480 to cook those ribs. No need to worry about temps are tend the fire in the cold ;)

You can be spoiled here in San Antonio. Right now in New Mexico it is 28 degrees. So I need to get use to this because next month I am going to see some snow.

J/K..Don't really care what the weather is when I want to smoke or grill. I've done it in
the snow when I lived in Washington state. Don't like the cold that is why I moved to
the south!  ;)

Old Dog not Very Old, or you would be older than me.  I am interested in your statement about brining ribs especially for several days.  I have thought about doing this but thought that the brining may make the ribs mushy.  Your thoughts on the method and you ingredients for the brining solution?  Two days is also my concern, as I brine turkey for only overnight max.  I am open for your expertise.

I have brined the ribs before with great success. I cook for my wife's pleasure. She likes the ribs fall off the bone and juicy. So that sets the stage. I use a very simple brine as follows:

1 cup kosher salt
1 cup light brown sugar
1 cup apple cider vinegar
1 cup apple juice
1 gallon of water
3 cubes of beef bouillon

No measurements - do what you like
pepper
chili
cummin
minced garlic
onion powder
Italian seasoning

Bring the mixture to a boil on your stove. Cool down to room temperature with ice cubes or let it stand. Get a Hefty giant zipper bag, and put in the ribs and then pour in your mixture.

Let it sit in the fridge for at least 24 hours.

For turkey, what I like to do is substitute chicken bouillon cubes instead of beef cubes. For the turkey, I make a mixture of butter and herbs melted and inject it into the meat and then place butter under the skin.

That is what I do.

No big deal.

If you decide not to do the ribs tomorrow just wrap em up tight and toss em in the fridge for the week. I have done that before when something happens and I cant get my smoke on.

Your pellet grill will come in very handy when the weather is not sit outside friendly. I am a frickin idiot and sit out day and night when the pit is on......

Our local mountains have been getting snow. They turned off the snow machines at Big Bear mountain cause they are getting snowfall and today feels like winter here in So-Cal....heck it is a frosty 58 degrees  8) :D
