Pecan Kissed Chicken Thighs

I got over 800 lbs of pecan logs, I figure everything is going to be pecan kissed

Used Stubbs chicken rub and on the Meadow Creek they go


Only used two logs for the entire cook. I am averaging about 1.5 hours a log. Temps were between 225 and 250 using 16" logs...nice. Towards the end of the cook, I needed a bit more heat and did not want to waste a log so I tossed in some lump to finish the chicken off.

Basted the thighs down with Stubbs Pecan Honey sauce........tasty

That looks like a perfect cook to me, Smoke - pecan is one of my two favorite woods - alder is the other.  Although not to everyone's taste, thighs are my favorite part of the chicken because of the moist, tender, flavorful meat.  The only problem I have with thigh meat is the amount of fat, but I usually pick that out anyway
