Set & Forget Cook

One of the reasons I love my Double-Chef & WSM is they function great as set & forget smokers!
Put on, get vents set & come home from work 9 hours later & temp is within 15 F of when you left!
After two smokes, I thought I'd try a "set & forget" cook on CGK, ( if wont do set & forget?)
Cooking 7 lb pork butt.
Loaded with 8 lbs of Royal Oak briquittes & 3 big chunks apple.
Got loaded up temp went to 350F before put meat on( no I didn't plan, it gets hot quik)
got settled in at 250 F @ 8:00AM.
Temp ranging between 250 F &270F depending on whether the sun is shining on cooker at 12:30P
Vents barely open!

Pulled the butt @195F after a little more than 8 hours.
Got home from work & watched temp this afternoon with adult beverages & Stvie Nicks.
Temps mainly about 260F but short spike to 290F when wood chunk ignited.
Butt looks good ,in pan for a couple hours.

Smoke , when my wife got for it for me , I was surprised . I initially thought I'd keep through the year & sell next year for $150, 1/2 of cost. I fiqured I'd get enough value out of the the entertainment.
BUT after a few cooks , I don't think it's any better than my WSM , it's easier to use , as an old man with a bad back , no bending & easier cleanup. Think I'll sell my WSM.

For many things it's better, but some things a normal cooker works fine!
No the pot will NOT FIT !!!

Tommy, for small 6-7 lb butts the Double chef with both racks ( & no pot ) will cook 7 butts at a time, for 8-10 lb will cook 5 to 6.
This cooker will cook a lot, but not that much.

Well the butt was a hit! Chunked it out, served with Parker house rolls, beans, & slaw.
Cleaned up grill this AM. The 8-9 hour burn used up less than 1/2 of the charcoal I started with. The burn only went around & got 1 piece of wood, more wood chunks next time.
The ash pan is less than 1/4 full, didn't bother to empty.
Works really well with briquittes. I like that so I don't have to keep two types.

Glad you are loving that new pit LA.  The WSM has always been the "Gold Standard" all other vertical cookers seem to be measured by, so this new rig must have really impressed you!!! Is it easier to clean because it sits higher on the stand?? The WSM's look like they sit right on the ground......

I bet some people at Weber are going to be giving this CGK the hairy eyeball if it takes off in sales and puts a dent in WSM sales!!!

Of course a brisket cook will always help one decide if a smoker is a keeper... ::)

Smoke , I have 9 cookers on my deck & it's too many to have them set up & use well.
I have 3 vertical charcoal smokers now, don't need them all. None of my cookers are worth much on Craig's List, I may give the WSM to my daughter & her housemate.
I'll give an electric big easy to my son.

Neither is hard to clean, or cook on .
The CGK every thing is waist high so this old fart doesn't have to bend so much.
Like many people , I had a chargriller smokin pro a $90 grill & side fire box smoker.
It truly was a POS , I had to put a brick on firebox lid to hold it down. I made it last almost 10 year, before rusting out.
This cooker is MUCH better built, but can I make it last 10 years?
Otherwise I'd wholeheartedly recommend it. Sometimes you have to take a leap of faith.
