Yard bird thighs

Nothing special but here's something to look at.
Thighs seasoned with Zacks Grilling Spice and some with Jan's Rub. 2 hours of apple and dual probe pid set at 225*. Took them to 165*. Had the maverick et732 monitoring and also checked with the fastest thermapen available. The black colored one ;)








Also had some kosher salt going on its second smoke. I put some more im with the already smoked salt. It's getting darker.

Thighs are the ONLY part of the chicken for me! Full of flavor and moisture. THose look great Mike!

The iPhone pics are not the greatest but  their  pics ;D  I've only smoked the salt 2 times for a total of about 4 hours. I'll keep putting it in every time I can as if I have room.

I like them breast-s-s-ss too - but only if they have been well brined or injected with some flavor. The fats in the dark meat of the thigh just carries flavor much stronger - to me.
