Ran across something a bit unusual at my grocery store yesterday . . .
Chicken thigh "filets" made from boneless, skinless, chemical-less, non global warming, no additive, only left wings included, humanely treated dead birds:
Soaked them for three hours in my buddy's special eastern NC "Elixir" and some EVOO . . .
Then grilled them on the Memphis using GrillGrates. Splayed some out flat and grilled for two minutes per side and "rolled" some and cooked for three minutes per side
Here they are plated with a baked Vidalia onion (butter, bacon and parmesan cheese) and grilled summer squash (coated in garlic, EVOO and oregano). I feel sorry for anyone who didn't have dinner with us tonight . . .
Chicken thighs, to a KCBS judge, are kind of a standard "thing" that is pretty predictable. These were DIFFERENT.
