Roasted chicken recipe:
Get a 4-5 lb roaster make sure to remove all giblets if included. I used a beer can chicken stand with no can or you can use a beer can. Make sure the can fits loosely. Rub the inside with your favorite spices, I use a salt and white pepper blend. Maybe a sprig of thyme..whatever you like. I then rub the outside with butter and from the top I pull the skin away about 1/4 the way down the breasts and back and rub butter in between the skin and meat. You can't have enough butter! I have done most of mine with our 100% Hickory pellets with the grill at 250 and until the internal breast is 165, about 4-5 hours. Goodness is not quick!
Let rest only about 5 minutes if that. Pull and serve!. This is awesome with garlic mashed potatoes.
