Title: Old school smoke

Set up my favorite smoker (my 26 kettle) for a little snake action.  Using a few chucks of apple (apple for me gives a nice light smoke flavor) on the snake.  A little brisket flat from Costco seasoned with some dizzy pig coffee rub and some smoking guns hot.

Everyone in the pool.

Temp stayed steady at around 247° or so.  I never touched the vents.  No probe in the brisket.  After 5 hours this is what I found.

I wrapped it up and put back on the smoker.  Four hours later a probe when in like butter.

Smells good.  Ohhhhh, nice ring on this puppy.

Very moist.

Made up some new potatoes mashed.  Didn't have milk so I used 1/2 & 1/2 with some Irish butter.  I like the skins on my mashed potatoes.  Since my wife isn't here I don't have to put anything green on my plate.

This was excellent. Love my 26 smoker.

Fantastic meal, Gus! Glad you see you enjoying that 26” kettle!
