I am having a great time griddlin'.  Haven't cooked on anything else for 2 weeks.
Deb saw a recipe for Brussels sprouts and bacon and wanted me to cook some for supper to go with air fryer chicken.  It really turned out.

Got a question for you Jaxon (and any other griddle owners):  How do you clean it and keep it clean between uses?

You may have seen in my videos that I squirt water onto the hot griddle. The steam it generates cuts right through the food and such so that you can easily scrape it off and into the drip pan.
After the scrape, I get a paper towel mop, squirt more water and wipe it down good (better use gloves).  After wiping it down, I let it cool down a bit - still pretty warm.  Then I get more paper towels and spread a light coat of lard to protect the surface till next time.  You can use canola, peanut, or vegetable oil, but my doctor advised me that the animal fat like lard was better.
I keep my griddle covered with the built in hard cover, too.

Your method sounds more than adequate.  Back when dinosaurs roamed the earth I did a short stint as a short order cook.  We used pickle juice poured on the griddle right after turning it off.  Talk about making your eyes water  :o

Great video, jack, and I'll be trying that recipe since we all love Brussels sprouts around here.  Oh yeah, and bacon... WE ALL love bacon!  ;D

I am currently a short order breakfast cook at a local diner here in town.

I get to cook on a 24"x60" 30 year old plus flat top grill.  Tons of fun.

I get the bonus of having the lunch cook clean the grill every evening  :thumbup:
