That's about right on the PorterHouse. Some loins are bigger, some are smaller, so it's hard to say that 1½" will equal 20 oz. But, 1½-2" is perfect for cooking/grilling and I would not order it less thick than that.

A 1" Filet will be approx 6-8 oz, maybe less. I'd go with the same thickness as the PorterHouse, 1½" and that might be closer to your desired 10 oz. Again, that would depend on the size of the Filet and which end it's cut from.

Don't let them talk you into a "Bacon Wrapped Filet", otherwise you'll be paying premium price for the bacon. Buy the bacon separate and put it on the steak yourself.

If you are in the mood for Sirloin, 2" makes a nice steak for the grill or broiler. Same with London Broil.

In the grand scheme of things, it's just a personal choice on steak thicknesses

A butcher with a sense of humor is a good thing. I like to know that the guy holding the knife can tell a joke and take a joke too! :D

Great advice, I like my steaks about 1-1/4" thick so that would be a pounder I imagine :)

My favorite porter house steaks were the ones my uncle, a butcher used to cut for Dad 1 1/2" thick and as large as a dinner plate, close to 2 pounds, I'd guess. I could never eat one now. Filets I like 1 1/2 to 2" but a small 6 oz. is plenty for me. When I get hungry for steak now a rib eye is my choice. Don

Remember the "tail" on the Porterhouse and T-Bone? That is today's "Flap Meat"  ;)
