So what are they and what part of meat do they come from?

Burnt ends are pieces of beef brisket (usually from the point/deckle and sometimes from the ends of the flat) which (after the brisket is done) are chopped (in roughly one inch squares), re-seasoned, sauced if you like, and re-smoked.

For a commercial BBQ place, Famous Dave's Burnt Ends are pretty decent :P

Burnt ends are my absolute favorite part of brisket, especially when taken from the point end. With the extra fat in them, when re-smoked & sauced, they are like eating little pieces of smoky beef candy... YUM!

For the past 20 years I've been grinding the uncooked Point for delicious burgers. However, I think my next one will turn into Burnt Ends :P

Yes it does. I coarse grind first, pick out enough for chili, the rest gets ground a second time thru the medium plate for burgers
