This will make a 3 1/2 lb family-sized batch:
Topping:- 5 to 6 slices bacon, fried drained & crumbled or cut into bits.
- 6 to 8 oz Shredded Cheddar Cheese
Mashed potatoes:- 2 1/2 lbs potatoes - washed & cut, but not peeled (it's rustic BBQ food, leave the skins on).
- 2 Quarts Water + 2 TBS salt
In a large pan, bring the water to a boil, add the salt, potatoes and cook until very tender. Drain the potatoes, reserving 1/2 cup of the potato water.
Return the potatoes to the pan and add:
- 2 TBS Butter (1/4 stick)
- 8 oz. Sour Cream
- 1/4 cup chopped scallions
- 1/8 to 1/4 tsp Garlic Powder
- 1/4 tsp Black Pepper
- The reserved potato water (1/2 cup)
Mash together until everything is incorporated. Transfer to a baking dish, top with the cheddar and bacon bits, then bake in a 275° - 350° oven, or smoker/grill, until the cheese is melted and potatoes are heated through.
