My wife and I went to lunch today at a local Mexican restaurant, Habaneros.  I decided to give their taco de lengua a try.  Everything else has been excellent, IMO.  The texture was amazing.  It was so tender, you would have thought they had prepared it sous vide style.  It was not as flavorful as most of their other dishes.



For those who don't know what "lengua" is, it is beef tongue.

Lengua is my favorite of the Mexican ingredients.  We have a local place that serves lengua burritos, and I order the same each time, with sopes, of course

My favorite is a Torta de Lengua but that taco looks good too!

Wonder how long you would need to SV beef tongue?
