Remove packaging but leave the net on. Put in a pan and cover with water. Add 2 bay leaves, 1 teaspoon garlic (powder or minced cloves) and some whole peppercorns. Bring to a boil, turn down and low boil for about an hour. Remove and now remove netting. Put on bbq at about 300 degrees until internal temperature of 130 degrees. I used Apple wood for smoke flavor.
Mix together 2
heaping tablespoons of marmalade, 2 tablespoons of maple syrup or honey and 1 tablespoon of Dijon mustard. Baste often until temp gets to 155. Let rest a few minutes and then enjoy.
You can skip the boil and just remove the netting and then bbq also but I like to boil some of the saltiness away.
