Made some Kielbasa yesterday. Let it rest in the fridge over night as I did not have the time to smoke it last night.
Going with a hickory and Jack Daniels blend on the pellets.

Deer meets pork 6lbs of each. Getting mixed with all the fine spices.

Here is an update on the Kielbasa. It has a ways to go before it reaches 152°F.
Time to turn the lights on.........man it gets dark fast now.
