Tossed on a 4 lb bone in pork shoulder. Simply seasoned with S-P-G and set the PB for 200. 7 hours later it was at 191 so we foiled wrapped and held for 2 hours.
Came out real good. The Pit Boss works very nicely on long cooks.
Would like to add that again no foil was used on the deflector. I did have the butt stick in a small section on the grates that are directly over the area where the burn pot is at. I wonder if a deflector should be added to sit over the burn pot like most units have. Not a big deal. Will keep on smoking and see if this is a problem.
