We always make a lot of taters with the T-day meal. Makes great tater soup, and fried potato cakes. This year I dug out an old recipe for Potato Souffle.
2 cups mashed taters(cold or hot)
1 (8oz) pkg cream cheese(soften)
2 eggs
1 small onion, diced fine
2 T flour
Optional: 3 1/2oz can french fried onions
Beat all up at low speed(except fried onions!) Add S&P to taste. Pour into greased baking dish(9" round is perfect). Put on optional fried onions. Bake at 300* for 35-40 min.
I would have taken a picture, but they just kinda looked like mashed taters lol, I didn't use the fried ones on top.
