I had a dr's appointment in Peoria yesterday and afterwards stopped at a fresh fish market. This is quite a rarity in Illinois! The special of the day was fresh steelhead filets flown in early am. So steelhead it was. I picked out a 2 pound filet and was on my way. It was a nice day so prepped the PK and GG's. The beautiful filet was cut in half, wiped with evoo, and lightly dusted with a 50/50 mix of Mrs Dash Lemon Pepper and Savor Spice's Way Out West. When the GG's were heated up on they went. I didn't take a temp, with fish I use the finger touch-method. I'm looking for the flesh to slightly firm but yet allow a bit of give. About 12 minutes in, these were pulled and tented for a few minutes. Plated with a brown rice asparagus casserole. Fabulous meal on a warm Spring night!
