OK, dumb question of the day
« Reply #-1 on: June 04, 2018, 11:57:03 AM »
Has anyone made BURNT ENDS from pork butt?     I know I have made them from boneless ribs and other cuts but I can not remember doing a butt this way.

Any thoughts?     I have to feed 20 + in aa few weeks and need something to fill in with and burnt ends sound just right!

Cooking 6 racks of ribs, 4 chickens and corn boil + burnt ends as of now

Yep!  I've even seen them turn up in a competition entry box now and then.  You can use any part of the butt that is relatively lean and can be cut into the size you want the "ends" to be.  The concept is pretty much the same as brisket burnt ends -- "meat candy" made via extra cooking and saucing of some bits.  Just remember not to actually burn them!  I made some from a strip of lean, tasty pork that nested near the bone.  Made approx. 1" cubes with it and soaked them in sauce for a while.  Then, I put them back in the smoker at 300 for about 30 minutes and dabbed on some more sauce.  They came out with a nice texture and very intense barbecue flavor.  Good snacks.  Fun to do.

I had to google that one...I did find this:

https://www.smoking-meat.com/september-12-2013-pork-butt-burnt-ends
That will work.   I was thinking more like cutting the butt into strips firdt then cut one inch cubes.  This would cook faster and have more bark on the pieces I'm betting

I'll post when I do these

I have seen poke burnt end cooks done here on the forum.

With that big ole Rec Tec I wouldn't pile em up, I would keep em separated for maximum smoke coverage...................

Tommy,
Remember these?  http://www.letstalkbbq.com/index.php?topic=13585.msg185073#msg185073

I am sure Kimmie remembers them.  She asked me when I was going to make them again.  They were really good, too.  Brings new meaning to "PIG CANDY"!!
