Greetings from the PNW

Retired military family, last in Columbus, GA and now, after over 20 + yrs (about 16 of which were in Ranger Bns.) living in PNW near family.
We have a PK, his baby mainly for smoking of late, and now a CookAir (mine) for a great sear on Sous Vide fridge and freezer items and maybe smoking cheeses or the milk of which they’re made….. who knows….
There is, I’m told, a CookAir guru spending time on this board and finding him/her and absorbing all possible knowledge is one of 2 goals, the 2nd? Meeting new food folks!

Welcome from right in the middle of the country.

You could teach me a few things about smoking on the PK.  I just grill on mine.

Smoke somethin' on it, post the recipe and process along with some photographs.  I'll try to model my cook after yours.

I searched on CookAir to help you locate the guru.  I got a few hits, but all were dated 2016.  Nothing fresh.
