I was visited by an old friend, so I got me some really big pork chops. Those were smoked first with cherry wood at 250°F.









After that I seared them on the mini egg on high heat to an IT of about 129°F.





Then they were seasoned with black pepper and a mustard-onion-topping. After that the chops were put back on the big egg to be cooked to an IT of 140°F.











That was not only the biggest but also the best pork chop I ever had.

Tell us about this sauce you used :)
It's more a paste than a sauce. Sautee some diced onions, add Dijon mustard, sour cream, salt and pepper to taste.
