Freezer paper tips & tricks

Long time listener, first time caller!

We're getting in the habit of using freezer paper (poly coated, 35# weight) to wrap up 1-1.5 pound logs of pulled pork for sale.   Through a lot of trial an error, Hal has the wrap down pretty good, but it still takes a bit of extra folding here and there, and sometimes more than 1 piece of tape to secure the package.

Any tips/videos out there showing a professional butcher doing this?   


Our first 'bulk' attempt.   This is a start on the 30 pounds we wrapped up.

Searched "wrapping freezer paper youtube" and got a few results that look promising.

I put the product in lower right corner of the paper, kind of diagonal and offset. I then fold the paper from the left over the meat. Roll over. Then fold the paper from the right hand side over the meat. Now roll tight to the upper left corner of the wrapping paper.

Did that make any sense to you? That's the way I've always done it. Once you do it a few times, it's a piece of cake  :)

Guy in the video did a sloppy job, paper was too small for that hunk of shoulder. But, you get the idea.

Thanks for the info. So wrapped correctly, how long will it last in the freezer vs vacuum sealed? Seems like it would be much less expensive.
Why couldn't Noah have swatted the 2 mosquitoes?.

If double wrapped, I wouldn't go much more than a year

Just butcher paper?  No saran wrap?  Best say to freeze meat without a vacuum sealer.

When I was in the Army we mover 15 or so times and the movers wrapped just as the fellow in the video said.  I never paid any  attention to them but now I recall that is how they wrapped things without any tape.  I guess it works because there was butcher paper long before vacuum  sealers.  Dee

I got a little frustrated last time I freezer wrapped my Bacon, this thread will help bunches. I need to find something else besides Blue painters tape, wife was helping and went a little berserk with it ;)

Butcher paper CAN be white or brown, but freezer paper is white and treated.
