We had eight pork chops that I wanted to grill after work yesterday as temps were to be in the mid-sixties but the weatherman was calling for rain! >:( So before work I made up a blend of 10 tsp of M3 and 5 tsp of WOW, mixed it up well and applied it to the chops, refrigerated until after work. The rain never came so fortunately I was able to stoke up the PK for a low and slow cook with a handful of Milt's Apricot Rosemary pellets for a nice smoked touch. When the chops were nearing their temp point-set I opened all vents wide open to get the grill grates hot and finish the chops with a bit of a sear. It was a nice relaxing night on the deck manning the grill!
Chops came out great with a wonderful mix of smoke and rub! Plated with potato salad, made for a real nice easy dinner!
