Who doesn't like a good BLT? Very few I'd imagine. We didn't feel like cooking up a big meal tonight so we went diving in the freezer and pulled out the pork belly we smoked on the KBQ not so long ago. You remember the one don't you? It was this fella here :

The better half decided that she wanted to make BLTs out of it so that's what she did.
She took some ciabatta and toasted it in the oven and cut some thick slices of that pork belly and crisped them up in a frying pan. The sandwich was built as follows : bottom bun spread with sun dried tomato pesto (good stuff!), pork belly, garden tomato slices, lettuce, provolone, fresh sliced avocado, just a little mayo on top bun. I had mine sans avocado but she and my son had it on theirs. Served with some hand cut sweet potato fries.

It was a simple, easy meal that hit the spot!
Afterwards we got in the pool then I cut some wood for the KBQ for an early morning smoke. Life is good!

I did on mine, that pic was my wife's BLT. I ditched the avocado and made sure the mayo could actually be tasted on mine :)

Everything on it sounds really good except the cheese. :)
Is that just an "RG thing"? I've never had cheese on a BLT.

I'm with you on the cheese but actually it works! Provolone is so mild it doesn't take away from the sandwich flavors. Typically there isn't sun dried pesto nor avocado on them either but sometimes you monkey around with something and it works :)
My son, the chef who is a snob, LOVED it. He said that is the type of thing that could be sold at the restaurant he works at. I take that high praise indeed.

I certainly agree with the "experimenting", & the avocado sounds great.
In fact, I probably would like just bacon, tomato, & avocado.

I have to admit, I do like pork belly but not so much unless it has been crisped up. Those first 2 pics from when we made it show that it is what pork belly is......fatty. It's good but a little too rich and unctuous (big word alert, lol). I think it's much more palatable when crispy.
And, yes she could win many a Throwdown with it, it was quite tasty. I wish I had another this very moment :P

Now that sounds interesting. I might like that.
I like peanut butter. It's just the jelly combo that turns me off. :D

Don't forget the pork belly bacon! that reminds me, as a kid I would make bacon & grape jelly sandwiches on toast or biscuits. May have to try that again.

Don't forget the pork belly bacon! that reminds me, as a kid I would make bacon & grape jelly sandwiches on toast or biscuits. May have to try that again.
That's a good combination for sure! Salty and sweet. I actually like strawberry jelly/jam/preserves on sausage biscuits! Yum!!

I think it is safe to say we all like a little kid meal once in a while.....washed down with an adult beverage of course ;)
