1 kg (2lb) beef (i like neck meat )
i mix in salt, b pepper, 6 cloves garlic(freshly minced )
1/2 tsp baking soda
1 tsp summer savory
mix the meat with the spices and with 1/2 a glass of soda water (clab soda )
you can add marrow bones to make it richer.
let it stand in the fridge for 5 hours .
shape and grill on a hot grill .
it goes good with mustard .
