Honey ham sticks

My 4 year old Grandson called this morning as I was stuffing the pepperoni sticks and said he needed some "not spicy stick".  Of course I knew what he wanted as he is my biggest fan of the Honey Ham sticks and chubs.  Told him that I would make him some.  So off to Costco I goes and buy 2 packs of bone out Butt.  Holly Cow the price keeps going up and up.  Paid $2.69 a pound.  Got home and ground the 30 1/2 pounds of Butt up.  Vac sealed 15 1/2 pounds of the grind and put in the new freezer.  Mixed up the remaining 15 pounds and got it curing in the fridge for a few days.  Will make some stick and chubs out of the 15 pounds.

All mixed up and headed off to the beer fridge till Tuesday when I will stuff and smoke.


Enough ain't enough and too much is just about right.
