One thing I have never done is making my own bacon, mostly due to not having belly available. Now our Costco is carrying skin off pork belly for 1.99 so I grabbed 4 slabs. Two I am using now and two in the freezer. Started with 17.7 lbs. Cut them in manageable size slabs. Weighed each piece and used 10.5's  maple bacon recipe. Having read a previous post about the amount of cure I split the difference and went with 1.5 tsp cure per 5 lbs of meat. Out of the cure last night, rinsed and refrigerated overnight on racks and into the smoker this morning. More to follow!

It's looking good so far, and $1.99 per lb is a really good price, especially considering the skin was already off.


Next time try using Cure #1 at the USDA prescribed rate of 1 level tsp per 5 lbs, for dry-rub cures, and I PROMISE you will get a proper cure AND be within the safety limits.

I looked again today at Costco and the pork belly was already sliced.....again. May have to ask if unscliced is available

Went back to Costco yesterday and picked up 2 more 10# skinless bellies. The bad news is the price jumped from 1.99 to 2.65 since I bought the first ones. They had whole or sliced belly.

It looks fantastic TF!!  How was the salt content?  Did it taste too salty or was it good?  Did you just rinse it after the brine or did you soak it to get out some excess salt?
