Mix up for lbs.

Added cure 2 to the UMAi LJ mix. Mixed 1/4 tsp tsp starter culture to 1/4 cup cold distilled water and a pinch of dextrose, set this aside and add LAST.





I sealed the UMAi 32mm bag lengthwise just to see how its going to work. You do not have to do this.





Made a couple regular 32mm also.




Hang time now for 72 hours.

Today is de casing the UMAi Landjager, cutting, tasting and vac sealing.

Taste is great. Home run to UMAi for the LJ mix.

If your not getting fool proof results like i do, Then your doing something wrong.
