Got 5lbs of 80/20 GB. Mix is AC LEGG #116 and 1 tsp cure 1.

Finally making a dent in some of my sausage supplies...whew. I think my wife may be a tad happy bout that   :D :D


Cover/fridge for stuffing/smoking tomorrow. 15mm collagen.

Not going to say what these will be used for ........ Yet   :D

Stuffed into sheep and collagen and in the smoker this morning with hickory smoke.

When i use natural casing i like to keep my work tray wet.


I do poke the natural casing to remove air pockets.

It's a lot more hassle but I much prefer natural casings to collagen. Can't get that snap.

Yep, not only are sheep casings a little more work, they've gotten pricey too.  But I really like the end results better.
