Out of smoked sausage...

So best be for getting some made! I sorta used Len Poli's recipe, at least for the spice mixture. I had gotten some pork and beef out of the freezer to grind, then saw a local grocer had 80/20 pork/beef chubs on sale for 1.29/lb. Already ground and the exact fat content I like for sausage so back into the freezer went my pork and beef. Saved me having to mess with grinding so it was a no brainer at that price. Mixed everything up last night, got up early and went to stuffing. Into the Bradley at 130 for a couple hours, then onto the RecTec at 180 with extra smoke for another hour. Into the SV at 155 until it reached IT. I LOVE this method, zero chance of a fat out. Chilled in an ice water bath, bloomed on the counter, vac sealed and into the freezer. Red beans and rice and calico beans here I come!

This was the main reason I got my Anova in the first place but I use it for much much more. The instructions will tell you not to use it unless the food is sealed in bags but I've never had a problem. I just run it in a pot of hot water with a tiny bit of dish soap for a few minutes after I'm done with the sausage, then run it for a while longer in just hot water to rinse it. Works great!

One other thing to add, then I'll shut up. I took it out for the photo but I put a Corelle cereal bowl of water in the top of the pot to keep all the sausage submerged while cooking.
